Wholewheat Apple Cinnamon Pancakes (V)

Good Morning!  I was craving something sweet and nourishing this morning (what else is new?) so I decided I would make some yummy pancakes.  This recipe was a bit of an experiment, I’ve never made it before.  Happy to say that it turned out well!  I made some quick homemade applesauce and added it to pretty basic wholewheat pancake mix.  This recipe is dairy-free, egg-free and refined sugar-free.  You can also easily make it gluten-free by substituting the wholewheat flour for all-purpose gluten-free flour.  Despite all the things that it doesn’t have, it is not lacking in flavour and the texture is light and fluffy.  It was pretty quick and easy to make, especially if you’re able to make the applesauce beforehand.  This is a great recipe to make when you’ve got a little extra time in the morning and you want to fill your home with the sweet scent of apples and cinnamon.

Ingredients

Quick Homemade Applesauce:

  • 2 apples
  • 2 tbsp lemon juice
  • 1/4 cup water
  • sprinkle of cinnamon

Pancake Ingredients:

  • 2 tbsp chia seeds
  • 4 tbsp water
  • 1 1/2 cups of wholewheat flour (can substitute all purpose gluten-free flour)
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 3 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1 cup of almond milk
  • 1/4 cup of water
  • 1/2 cup applesauce

Directions

Applesauce:

Peel and chop two apples of any variety – I used Gala but I’m sure any apple will work (something with a little extra bite like a green apple or macintosh would be delicious)!  Put them in a small sauce pan and add water and lemon juice.  Bring to a boil and then let simmer for 20 – 25 minutes, stirring occasionally.  When the apples chunks are soft and easy to mash add a sprinkle of cinnamon and mash into a sauce.  Remove from heat and let cool.  Now onto the good stuff!

Pancakes:

  1. Make a chia egg – add the 2 tbsp chia seeds and 4 tbsp of water to a small bowl and let sit for 5 minutes until it forms a gel like consistency.  In a mixing bowl add flour, baking powder, salt, cinnamon, and mix together.
  2. Next add the wet ingredients – coconut oil, chia egg, vanilla extract, maple syrup, almond milk and water.  Mix together and voila!  Your basic vegan pancake batter.
  3. Now simply incorporate the applesauce and you’ve got apple cinnamon pancakes ready to be cooked.
  4. Heat a frying pan on medium heat and add a little extra coconut oil to stop the pancakes from sticking.  Pour a large dollop of batter on to the pan.  The amount depends on the size that you like your pancakes, so use your discretion.
  5. Cook for 5 minutes, or until golden brown on each side.  If you only want to make a couple pancakes, you can cover and save the batter in the fridge for a quick and delicious break fast the next day.  Or alternatively, you can cook all your pancakes and freeze some of them for a later date.  Just pop them in the toaster to reheat and enjoy some apple cinnamon goodness on a busy morning.  Serve with maple syrup, the extra apple sauce or your favourite pancake toppings.  Enjoy 🙂
