Steel Cut Oats (Fully-Loaded)

If you’re vegan, plant-based, living in a cold place, and secretly a granny at heart, you know that the only way to start the day is with oats! I generally have overnight oats made with rolled oats but when I have a little bit of extra time in the morning, I opt to cook up some steel cut oats and load them with everything in my cabinet.

Ingredients

  • 1/2 cup Steel cut oats (makes about 2 servings)
  • 1 cup Water
  • 1/2 cup Almond milk (or your favourite kind of milk)

Extras:

  • Goji Berries (or dried cranberries, fresh berries, frozen berries – whatever you like)
  • 1/2 Banana
  • 2 tbsp Chia seeds
  • Walnuts (or whatever nuts you prefer)
  • 1 tbsp Maca powder
  • 2 tbsp Maple syrup
  • 1/4 Almond milk
  • 1 tsp Cinnamon

Directions

Add steel cut oats to a sauce pan and pour in water and almond milk.  Turn heat onto medium high, stirring occasionally.  Bring to a boil, and then reduce heat to low.  Keep stirring fairly frequently and let cook for about 15 minutes until most of the liquid is absorbed and oats have softened up.  Remove from heat and serve.

Now the fun begins!  You can add anything you want pretty much.  The extras that I listed are my favourite additions but you can cater to whatever you enjoy and what you have available.  Even just cinnamon and sugar is delicious or any kind of fruit you have on hand and some extra almond milk.
