Greens and Grains Feel-Good Soup

I am coming down with a cold, so I wanted to nourish my body with lots of veggies, and protein to keep my body full.  What better time for some hearty veggie soup with pot barley and white beans.

Ingredients

  • 1 cup white beans (dried)
  • 1 cup pot barley
  • 3 garlic cloves minced
  • 1/2 large onion
  • 2 tomatoes diced
  • 1 tsp balsamic reduction
  • 1 tsp oregano
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • salt and pepper to taste
  • 4 small/medium carrots diced
  • 1 can diced tomatoes
  • 1 litre veg broth
  • 2 large handfuls of greens (kale, spinach,chard, whatever you prefer – I used an organic “power greens” mix)

Directions

Soak barley and beans for 8 hrs, or overnight, in separate bowls. Put barley in a small/medium saucepan with 3 cups of water and bring to a boil. Let simmer for 30 mins or until all the water is absorbed. Use the same directions for the beans – cook in a small saucepan in 3 cups of water, bring to a boil, let simmer for roughly 30 mins or until the beans are tender.

While beans and and barley are cooking. Mince garlic, and chop onions. Add to a large pot with a tbsp on cooking oil. I used grape seed oil. Cook for 5 mins until onion is translucent. Add the diced tomatoes and drizzle with balsamic reduction.  Meanwhile, chop up the carrots and add them to the pot.  Add the can of diced tomatoes.  Next add the herbs, salt and pepper, and cover for 10 minutes to soften up the carrots.

Add in the veg broth and keep soup simmering over medium heat.  Once the beans and barley are cook, drain them and rinse in cool water.  Add them to the pot.  Next add the greens and cover, turn heat down to medium/low and let simmer for 5-10 mins more to allow the greens to wilt and for the beans and barley to soak up some of the flavours in the soup.  Add more salt and pepper to taste.
