One Bowl Peanut Butter Chocolate Chip Cookies (V/GF)

A new week, a new chocolate chip cookie! The peanut butter adds a bit of saltiness so these cookies have some great savoury-sweet thing going on.  These are vegan and gluten-free and you can whip this all up in one bowl.

Bake time: 10 mins

Makes 10-12 cookies

Ingredients

  • 1/4 cup coconut oil
  • 1/4 cup peanut butter
  • 1/4 cup cane sugar
  • 1/8 cup maple syrup
  • 1 tbsp vanilla extract
  • 1/4 tsp xanthan gum
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp arrowroot starch
  • 1/2 tsp salt
  • 1 cup brown rice flour
  • 1/4 cup chocolate chips

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine coconut oil, peanut butter, cane sugar, maple syrup, vanilla extract.
  3. Add xanthan gum, baking soda, baking powder, arrowroot starch, salt, and mix in with sugar/oil mixture.
  4. Mix in flour until dough forms.
  5. Add chocolate chips
  6. Scoop 1 tbsp of cookie dough, and roll into a ball. Place on baking sheet and flatten slightly with a fork.
  7. Bake for 12 mins.
  8. Let cool for 10 mins before removing from baking sheet.
